About the journal

The Journal of Food Science, Technology and Innovation (JFSTI) is an international and official journal of the Ghana Association of Food Scientists and Technologists (GhAFoST) (https://www.ghafost.org/) that aims to publish high-quality, innovative papers in the fields of food science and technology, specifically food nutrition, food chemistry and biochemistry, food biotechnology and microbiology, food processing and engineering, food preservation and safety, food packaging and storage, and food quality and sensory analysis. It will consider articles related to food from other disciplines. Original research articles, review articles, letters to the editor and short communications written in English (United Kingdom language) and of high quality are accepted by the journal for consideration for publication.

JFSTI is a peer-reviewed journal aiming to be an inclusive source of information for researchers, industry professionals, and policymakers involved in the food science and technology sectors. It seeks to publish cutting-edge research that drives innovation and addresses current and future challenges in the food industry. The methods or approaches used in the work should be novel. It is also essential to clearly state how the results will impact the food industry or the scientific community.

The journal is an open-access (OA) journal that publishes original papers from fundamental and applied research that have not been published previously. Authors would voluntarily contribute USD 50.00 for articles accepted for publication to support the operations of the journal. WACREN sponsors the journal; hence, no article processing fee shall be charged.
